We believe that the best way to taste nigiri sushi is to enjoy the harmony between the fish and rice in your mouth. Put the entire piece in your mouth. Do not bite into it
We try to stay away from hatchery fish as much as possible. We use fishes from Japan, inshore fishes and those from North America--natural fishes that are suitable for sushi around the world
Rice to sushi is like life to a living object. We use short-grain rice, made here in California. For sushi, we use the Koshihikari brand. For other rice dishes we use the Yumegokochi brand. We believe we can control the quality of the rice by keeping a fixed rate of water used to grow the rice. We are very proud and honored to learn everything about our rice from its producer, Mr. Ichiro Tamaki.
Currently, we are using wasabi grown in the Izu region of Japan. Though we are not particular about where the wasabi comes from, we would like to have our guests enjoy real wasabi
